Healthy Recipe #3 - Tuna Carbonara

I love pasta food!  I consider a pasta dish as my ‘comfort food’.  And here’s another healthy pasta recipe that is very easy to make.  My kids are sometimes choosy when it comes to food especially seafood, but this is one simple recipe that I can cook in a jiffy that they really like.  Main ingredient for this carbonara recipe is tuna

Just to briefly give you some of the health benefits of tuna, tuna is an excellent source of high quality protein, and is rich in a variety of important nutrients including minerals like magnesium, selenium, and potassium; the B vitamins niacin, B1 and B6, and the most important and beneficial omega-3 essential fatty acids.  Omega-3 is named essential fatty acids because these are indeed essential for our health but cannot be made by our body, thus must be obtained from foods like cold-water salmon or tuna fish.  Omega-3 helps prevent blood clots, heart attack and stroke, improves blood flow, helps reduce inflammation of the skin and reduce the risk of skin cancer, and is essential for liver health which helps to promote the detoxification of the body.

My Tuna Carbonara

For this simple tuna recipe, I use the following ingredients:

0% Trans Fat 50% Reduced Cholesterol
1 small can (184g) tuna chunks in water, drained
1 pack 250mL all-purpose cream, preferably 0% Trans Fat
Olive oil
Garlic, finely chopped
Button mushrooms, chopped (optional)
Grated cheese or parmesan cheese (optional)
Salt and pepper to taste
Spaghetti or linguini noodles

Method: 

1.  Cook pasta noodles according to package instruction.  Drain pasta noodles and set aside.

2.  Heat olive oil in a casserole over low heat.  Saute chopped garlic, followed by mushrooms (optional) then the drained tuna chunks.  Increase to medium heat until the tuna chunks get cooked.

3.  Add the all-purpose cream and a little bit of purified/distilled water depending on your desired creaminess.  You may add grated cheese or parmesan cheese.  Reduce the heat to low while constantly stirring the sauce to prevent from forming lumps.  Add salt and pepper to taste.

4.  After cooking, depending on what you desire, pour some sauce over a serving of the cooked pasta in a plate, or combine the whole sauce with the pasta before serving.

  7. i cook this all the time. although i add butter and onions and a little chopped red bell pepper. it gives a little unique taste. my kids love tuna pasta too.
